CUA 102 - Basic Safety & Food Production Sanitation3 credits This course provides the principles and procedures of proper sanitation and safety relating to culinary industry. Managerial considerations will be discussed as well as factors contributing to contamination of food and food preparation. Students will gain an understanding of approved building materials, equipment, and state and federal guidelines. Emphasis will include safe techniques used in food preparation, receiving and storing, along with essential managerial focus on health standards. [F]
