CUA 103 - Kitchen Production Skills I2.00 credits Initial culinary training for chefs includes concepts about safe, sanitary, and efficient food production procedures, orientation and training on equipment, hand tools, and foods, and applications of nutritional concepts to recipe writing. Food inventory management skills will be practiced using both traditional and computer-aided costing. Adopting professional standards regarding uniforms, dependability, teamwork, and quality performance will be emphasized. Field trips may be required. Corequisite: CUA 103L.
